INGREDIENTS

  • 12 egg whites
  • ⅔ cup granulated sugar
  • 1 tsp vanilla extract
  • ¾ cup oil
  • ¾ cup cream cheese or yogurt
  • ½ cup milk
  • ½ cup cake flour or ¼ cup: flour, starch

INSTRUCTIONS

  1. In a large bowl, beat the 12 egg whites until soft peaks.
  2. Preheat oven to 320° F.
  3. Then add in all the other ingredients and beat until stiff peaks, or well combined.
  4. Pour into a greased / lined 9 inch square pan, and put into preheated oven.
  5. After 20 minutes, turn the heat down to 280° F and bake for 50 minutes.
  6. Let it sit in the oven for 5-10 minutes (optional), and then take it out.
  7. Flip the fluffy cheesecake onto a plate, sprinkle on powdered sugar, and serve with fresh fruit and whipped cream. Enjoy!

TIPS

  • Never scoop flour (or any powder: cocoa powder, cornstarch, powdered sugar, etc.) directly with your measuring cup. You’ll pack the powder really densely, giving you more than the recipe asked for. Instead, use a spoon to scoop it into the measuring cup.
  • To prevent the top of your cheesecake from burning, cover it with aluminum foil 20 minutes through baking.
  • Add ½ tsp of baking powder for a fluffier cake.
  • Substitute sugar for: honey, syrup, Splenda, any sweetener of your choice.
