Take a perfect bite from a delicious double chocolate chip cookie, enjoy the satisfying crunch. Savor the mouthful of chocolate joy, and go on to chomp the rest. ☀

INGREDIENTS: 6 cookies

  • 1 tbsp oil
  • 3 tbsp granulated sugar
  • 3 tbsp honey
  • 3 tbsp yogurt
  • 1 tsp espresso or instant coffee
  • ½ tsp vanilla extract
  • ⅓ cup flour
  • ¼ cup cocoa powder
  • ⅛ tsp salt
  • ⅛ tsp baking soda
  • ⅓ cup semi sweet chocolate chips
  • ¼ cup mix ins: nuts, dried fruit, more chocolate, etc. (optional)

INSTRUCTIONS

  1. In a bowl, mix: 1 tbsp butter, 3 tbsp granulated sugar, 3 tbsp honey, 3 tbsp yogurt, 1 tsp espresso, ½ tsp vanilla extract until smooth.
  2. Add ⅓ cup flour, ¼ cup cocoa powder, ¼ tsp salt, ¼ tsp baking soda and mix until just combined.
  3. Fold in ⅓ cup chocolate chips and ¼ cup additional mix ins.
  4. Scoop batter into 2 inch diameter cookie dough balls.
  5. Bake at 350° F for about 10 minutes.
  6. Let your cookies cool, and enjoy!

TIPS

  • Never scoop flour (or any powder: cocoa powder, cornstarch, powdered sugar, etc.) directly with your measuring cup. You’ll pack the powder really densely, giving you more than the recipe asked for. Instead, use a spoon to scoop it into the measuring cup.
  • If you want the most crunchy, crispy cookies, make sure your cookies are cool to the touch before eating them. (i promise it’ll be worth it)
  • Substitute oil for: melted butter, an egg yolk, buttermilk, or mashed avocado.
  • Substitute yogurt for: a whole egg, 2 egg yolks, cream cheese, or applesauce.
  • Substitute the sugars for: nutella, honey, or any sweetener of your choice.
